Smoked Salmon with Avocado and Wasabi Cream Cheese Finger Sandwiches
(Islay, Pary II)
Bruichladdich - Lightly seaweedy, emphatically salty, slight oiliness
Laphroaig - Starts with a sherryish sweetness, then to seaweedy, soothing oiliness

Fourth Course

Wild Mushroom Ravioli with Eggplant and Goat Cheese
(Eastern Lowlands I)
Glenkinchie - Starts very clean and changes to a spicy finish, complex flavors of cinnamon and ginger


(Highlands II)
Benriach - Cookie like with touches of butterscotch
Dalwhinnie - Aromatic, heather-honey notes, malty sweetness
